Bacon, Swiss Cheese & Silverbeet Quiche
Serving Size: 16 slices (2 dishes) 700grams bacon (about 12 rashers) 3 Cups of sliced Silver Beet 2 or 3 sheets frozen puff pastry 12 large eggs 2 x 250gm containers creme fraiche (2 1/4 cups) or half sour cream half thickened cream) 1 teaspoon salt 1/4 teaspoon freshly graded nutmeg 2 cups (300gm) coasley grated Swiss Cheese or Gruyere if you want to splash out and spend a fortune Equipment: a round (2 inches deep) fluted quiche pan with a removable bottom OR a ceramic quiche dish. Dice & Cook bacon in a heavy skillet over moderate heat, stirring occasionally, about 15 minutes. Transfer to paper towel and drain Roll out pastry over your pre-oiled (i used spray oil) quiche pans and when defrosted push lightly into the base and egdes. if the puff pastry doesnt cover the while area nicely its quite ok to take from another sheet and fill in the gaps Trim pastry flush with rim and use to fill gaps if you like too. No need to toss out perfectly good puff pastry! Whisk eggs in a medium bowl until well combined, then wisk in creme fraiche Mixture, salt and nutmeg just until smooth. Cover the base of the Pastry with Silver Beet, then the bacon then Grated Cheese. Pour in Egg Mixture over the top. No need to fill to the top as the cheese will melt down and then it will all puff up as you can see in my pictures below. Bake quiche until center is set ( it should not jiggle when shaken), for me it was about 35-40 minutes in a fan forced 175C oven. Transfer to a rack to cool for 5 mins of you can serve at room temperature if you like. Very nice! But I've noticed you've posted a couple of these in the main Geek Food forum, when they should probably go into the Geek Recipes subforum so they don't get buried in normal discussion.
Moving them as I find them, but something to remember in future, ta.

Was up browsing and I have decided to make this for dinner tonight.
Thought it was worth a bump. Not especially the cheapest ingredients but definitely worth a special mention EDIT: and sorry Agg i have found my way around now

Ah, but real men don't eat quiche. That being said... that's a mighty fine Bacon, Swiss Cheese, Silverbeet and Egg Pie!

Quiches are awesome!
This is one of the only ones i have with out mums homemade tomato sauce because all the flavour is already included ![]() I just love throwing all the ingredients in and out of the oven comes something delicious and satisfying with not much effort at all.

Made this tonight. Both quiches were smashed by the house, highly rated by all.
