Family tradition to add pineapple. Yum.
any reason some version of this wouldnt go well over a hotdog?
is it the kind of chilli that would work ... im imagining a less chunky kind of chilli.

Yeah it would work well as a chilli-dog I reckon.
Just go a kilo of mince instead of half mince half cubed beef and maybe put the capsicum through a food processor or chop it up a bit more finely.

I've cooked so many of your recipes btw, got a couple of batches of your tikka masala in the freezer as we speak

One thing I forgot, I also added 4 slices of bacon chopped, this would go very well in the hotdog too.

Make sure you post some pics when you make it, I'll feel quite honoured if you do

I can attest Stinga's recipe is choice however I had to add almost a few teaspoons of salt.

Thanks Jobe...funny you say that, I made another batch on Monday night and added 1ts of salt and 2ts of cracked pepper + 5 pieces of bacon chopped up and fried. Could definately taste a difference.

I used Stingas second recipe to make CCC last night. Turned out really well. I added a tsp of cinnamon and I forgot to buy beer so I left out beer and sugar.

I also just used 1KG of mince instead half half cubed beef.

Still turned out really well. Tasted delish. Definitely make it with the beer next time.

i think beer is the best thing you can possily add to this, seeing pineapple made me a bit nauseous but to ach his own.

i made some the other week, tried using diced onions which i pre-browned then knocked off the bench on to the floor, so i threw rough cut raw onions in. cooked it for the second hour with the lid off to dry it out

i think i need to work on the spice mix, at the moment i just use (this is with 500g mince) a heaped tablespoon of paprika and a bit less ground cummin, heaps of gorund pepper, a chopped jalepeno and some cayenne. need to buy more garlic powder, i used an old el paso mix sachet but they are way too salty and quite expensive.

wish you could buy canned black beans easily, i've tried using dried beans before but never pre cook them so CBF.

Thanks for trying it Ingy, good to hear you liked it.
There's so many ways you can make this, I'm always trying something different each time I make it.

I like using 1/2 diced beef, the chunks of beef are really tender, like in a casserole. Bacon goes pretty well in it too.

When I do my full-bore version of CCC I go the whole hog and put in cocoa, industrial-strength espresso, and a can of guinness. Reduce the liquid slowly and it comes out...rich.

sick of eating mcdonalds and other rubbish, back to ccc.

this batch had 2 onions, one big can beans, 500g safeway mince, a jar of red wine and garlic pasta sauce (no tomato cooking sauce left) tomato paste, half a beer, cumin, paprika, ground coriander, cocoa, chilli flakes, garlic powder, oregano and cayenne.

just portioned it out and had a bit, very rich! the pasta sauce didn't make it weird which was a concern.
