Default Buffalo Wings (hot Wings) with Blue Cheese Dipping Sauce

So i decided to make some of these after a mate asked if i wanted to go to the Kodiac Club (which has them!!!)
Unfortunately as i had spent about $250 on steak dinners over the last 5 days i thought it prudent to save some money.

You will need the following ingredients to mimic my night
  • Canadian Club
  • Dry Ginger Ale (preferable canada dry)
The above ingrendients are essential to get in the right mind set.
Followed by

  • Flour
  • Salt / Pepper
  • Chicken Wings
  • Hot Sauce (more on this later)
  • White Vinegar (depending on the hot sauce)
  • Butter
  • Oil (for the deep frying)
  • Celery (something green on the plate)
  • Sour Cream
  • Blue Cheese

THE WINGS
  1. Grab your chicken wings and cut them into drummet/wing pieces (if not done already) Remove excess skin from them
  2. Throw enough flour in a bag to coat the wings and season with salt/pepper
  3. dip wings into water
  4. add wings into bag and coat with flour, you should have a good coating, if not re-dip into water and recoat
  5. once coated bring oil to 190c and just before adding wings crank up the flame (to ensure the oil temp does not dip and maintain the 190c)
  6. add wings in batches so as to not have the oil temp drop
  7. remove wings and put aside

THE SAUCE
Lets talk about the selection of sauces, my preference is fransk red hot sauce but cholulas works great.
I do find the tobasco acceptable but you will need to play with the ratios/ingredients
  1. add 1 cup of Hot sauce to a pan and slowly bring the temperature up
  2. as the temperature is coming up add 1/2 a stick of butter to the mix and stir untill disolved
    NOTE: you do not want to boil the mix as it will split
  3. add white vinegar (a tablespoon at a time) to taste
    I prefer a quite vinegary hot sauce but it comes down to personal preference
  4. once mixed through add to a container and mix with wings. a container with a lid is perfect for this so that you can shake and cover evenly

THE DIPPING SAUCE
  1. Place 1/2 to 1 tub of sour cream (500ml) into a bowl
  2. add blue cheese (1 tablespoon at a time) and mix through evenly
  3. add untill the mixture is at the desired taste

SIDES
  1. Cut up celery to make look pretty, at this stage as you have been drinking a lot of CC&Dry you will be pretty toasted. The celery keeps the missus happy when she sees what you and your mates have been eating.

what's the rough hot sauce to chicken weight ratio?

1 cup hot sauce:1kg wings?

probably 1 cup to 1/2 a kg, the batter/crust on the wings tends to soak up pretty quickly

I'm assuming they can be done in the oven as well?

Not really keen on all the oil. But I doubt you'd get the same flour/crunch without it.

Definitely keen on giving it a go, the standard honey/soy is a bit old at home now.

my GF swears you can do them in the oven, i would suggest doing it on a wire rack so as to crisp them up all over.

in relation to frying, its my preference, i find if you have it at a high enough temperature it comes out crisp and not oily/sogy (hence why i put empfasis on the temperature of the oil)

also, the oil is the least of your problems, look at how much butter i use

Man I love Buffalo wings

When I lived in Toronto Canada we used to regularly take the 3 hour drive south over the border to the Anchor Bar which is purportedly the birthplace of buffalo wings

Legend goes that the owners son had his mates over for drinks and they got hungry at midnight. The mum got the old chicken wings, deep fried them and put some hot sauce on .... Voila! The originals are still the best and they will FedEx them anywhere in the country

Gotta try me some of your recipe though...

PS there is no way you can do real Buffalo wings in an oven - has to be deep fried goodness

Cool And BTW you can get buffalo wings at the Merrywell as well. Great burgers too.

Im moving back to Oz shortly and have been trying to work out how I will get my weekly wing fix, main obstacle being the buffalo sauce. Will give this a try

Ingham makes Buffalo Wings ready made. They only cost $7.95 at Coles and Woolworths for a bag containing 10 wings marinated and coated with a spicy coating and they are delicious. No need to spend time making them. I put them under a grill for 20 to 25 minutes turning once. Chicken wings already contain a fair amount of fat in the skin so heating them in a convection oven or grill is the healthiest way to do them. I've tried other brands but Ingham got the coating right and the Ingham ones taste by far the best to me. They are so tasty they are addictive.

Wow.....I just read that exhaustive analysis to the end. Great information!! At my shop, Im always trying to make more use of the combi oven, and where possible, not use the deep fryer. Wings have ALWAYS been one of those 'must-fry' curiosities. Not anymore.
