Name of recipe: Salsa
Notes/description: A cultural staple in south Texas. It can be made many many ways. This is mine. ![]() Ingredients Required: 2 medium-sized tomatoes 1 medium-sized white onion the juice of one small lime 1 jalapeno 1/4 c corriander, chopped (has to be the fresh stuff) Equipment Required: a good sharp chef's knife and either a food processor or a blender Instructions: Wash tomatoes, peel onion, and cut each into eighths. Slice jalapeno, but make sure the seeds are intact. Put tomato, onion, jalapeno, and corriander into blender/food processor. Squeeze lime juice over ingredients. Blend until the mixture has a chunky texture. Serve with chips (the crisp kind...although you can try it with fries, who knows, could be good, hehehe ) or as a generic condiment. Options: Fresh jalapeno is the best...although I'm sure it would be OK with the pickled stuff too. I've never tried this with other hot peppers, so if you'd like to experiment feel free and tell me how it goes. Fresh corriander, though, is a must. It should be chopped, but not finely chopped. The mixture should taste slightly of corriander, but not overpowering...and "hot", but not "burn-your-mouth-off hot". hehehehe. If you desire a milder taste, take the seeds out of the jalapeno.
