I really prefer cheap Chinese ceramic knives over any expensive steel knife.
What advantages do people see in steel?

i used to have a 5' x 1' utility blade and 8' x 1 1/2' chef's blade until they were "lost" by a person years ago bot hand made from hacksaw blades with wood handles so sharp they would cut fingers n only sting when fruit juice or sewing machine oil n sharpening dust got in the cut.

the ability to sharpen it easily, no worries over chipping, flexibility if desired, and the weight is not a bad thing at all.

I did buy a Kyocera ceramic knife the other week to try it out, quite nice, but it's too light for serious work. makes an excellent onion chopper and tomato slicer though, I don't regret buying it.

if I can find anything to criticise, the plastic handle is naff compared to a nice wooden one, and the blade is a little "grippy" compared to steel - I cubed up a couple of chicken breasts with it earlier in the week, and the sharpness of the edge is overcome by the way the meat is pulled by the flat of the blade.

I buy single "branded" knifes but only when on special.
Just bought a 15cm Global @ 40% off from Myer . Last sale purchase before this one was a big Global - also at Myer
Last year I got a Shun(my personal fav) cooks knife(approx 25cm) for $80 reduced from $250ish- king of knifes
I have some Furi blades - i find the quality inconsistent but they have done returns quickly(as mentioned earlier in this thread - they crack seemingly even when not in use. I got a refund after my second one went)
Also I have a cheap($20) cleaver from a chinese grocer that is good - it doesn't hold its edge for too long but gets very sharp .Maybe it losses its edge quickly as I abuse it more, cos it was cheap.

I like having 4-5 knifes that are good quality then having 10+ of junk.
