Damn, I was actually meaning to give Geronimo a try.

Just got an order from Bigwig Jerky Co (mate of a mate), good enough for my standards, think he's won a few competitions.

You've gotta leave the door open a crack for the humidity to escape. I usually stick a pair of tongs in the door. Works a treat.
