I've been running 6x2GB on X58 for about two years. No hassles.

Plus x58 was never designed to run all 6 slots at 1600mhz+ speeds.

Now i've swapped to 3x4gb sticks and it runs perfectly.

Must just be your mobo. I've had all 6 slots filled for over a year. Always boots fine, always reads the same/all the ram shows.

PC has always ran perfectly

(this is with 6x 4gb sticks @ 1333)

Probably. I was trying to run them at 1600mhz, but even running them at 1333mhz I would still get memory not showing up.

No big deal, its fixed now that i've got 4gb sticks.

I've been running 6x2GB on an Asus board (see Sig), never had a problem, and I do use quite a bit of RAM (at times, up to 50 RAW images open using ~10GB). No problems with OC either, running stable at 1800C8 even though they are rated at 1600C9.
