The ironic thing is, psychologically, a big bikie looking bloke with a huge beer gut would be discerned by most people as more manly than an oiled up body builder talking about oatz.

Sort of but mostly not.

Hops contain a plant equivalent of estrogen that is true (most beer of course contains hops).

The reason for the gut/bitch tits is directly related to any other behaviour when drinking - eating and not exercising.
