I actually tried this at a degustation here in Brisbane.

Was chocolate & bacon flavored ice cream with sponge cake and caramelized bacon.

Was interesting and very tasty. Wouldn't have it all the time though.

I'd definitely try it once but I think the chocolate would be too overwhelming and I'd want more bacon flavour coming through.

Bacon + maple syrup + oven = life changing. Even better to chop it up and mix it into fresh vanilla ice cream.

It needs to be the kind of bacon with lots of fat like in the link though, not the stuff we usually get in Australia.
