Default Do I even need this?

Hi all, (tl;dr at the bottom)

I'm thinking about going ahead with the purchase of some new gear, at the moment my current gaming rig is a Dell precision M6600 with firepro 8900 (HD6970m drivers). I'm very happy with it however all the new games get bad mouse lag when maxxed out on the settings, despite the FPS being acceptable. So now it's time to upgrade, and go back to a desktop machine.

I currently have this hardware in my server case, which I will be modding to make pretty and use as my main rig:

i5 2600k CPU
Asus Sabretooth P67
8GB corsair
Random $50 graphics card

Now I'm not fussed about overclocking and stuff (blasphemy, i know) but I do want a rig powerful enough to max out settings in new games WITHOUT a full 1000ms mouse lag, which kinda ruins it for me. I have been looking at buying 2x new GTX690s but i decided that was too over the top so am thinking of getting just one. My question is though, is one of these gonna be awesomely fast or would I see better performance from two lower spec cheaper models in SLI? (ive never used SLI before) keeping in mind that I have no idea what kind of support games have for multi GPU setups. My budget is around $1600 for a graphics card but I'm obviously happy to spend less but only if it's not going to compromise performance

Given that I've just got my hands on a dual CPU xeon server I won't be using this machine for anything other than gaming, which won't benefit from extra cores, so should I upgrade the i5 CPU or motherboard to something newer or will it be sufficient to drive the new GFX card?

tl;dr: will my i5 drive a GTX690 to its fullest or should I upgrade the whole lot? what to? is a GTX690's performance even that good? should i get a cheaper card? what about SLI?

turn off v-sync to get rid of mouse lag.

I have a 670 and it churns through all games like butter @ 1920*1080.

I tried that to no avail just when it's under load there's a delay with everything.

Fuck it just bought a 690.

well I find that nVidia is less troublesome than ATi anyway, not only that but the 690 is an awesome card you will be happy!

Fyi op the 2600k is actually an i7 and will be plentiful for gaming at 1080p or 1200p resolutions... if its an i5 2500k then once again ur OK for those resolutions

an i5-2500k performs exactly the same if not faster then an i7-2600k in games due to most games not using hyper-threading (what the i5 is missing)

As for 690, if you paid $1500, massive waste of $.. 2 x 670 or 680 much better purchase.
