Default Caramelised Onion And Feta Tartlets

Really simple but damn delicious!

Ingredients:
1 1/2 tablespoons olive oil
2 large red onions, finely sliced
2 teaspoons chopped fresh thyme
3 sheets ready-rolled shortcrust pastry
70g feta cheese, crumbled
3 eggs, lightly beaten
150ml cream

Preheat oven to 180ºc. Heat the oil in a frying pan (do not use a non-stick one or the onion won't caramelise). Add the onion and cook, stirring occasionally over medium-low heat for 30 minutes or until dark gold. Add the thyme, stir well and transfer to a bowl to cool.

Grease 24 shallow patty tin holes. Using a suitable cookie cutter (slightly larger than the edge of the hole), cut out 24 pastry rounds and line the tins with the rounds.

Divide the onion among the patty cases, then hand crumble or spoon the feta over the onion. Combine the eggs with the cream, season if required (I didn't because the feta was quite salty) and pour into the pastry cases. Bake for 20 minutes or until puffed and golden. Leave in the tins for 5 minutes before transferring to a wire rack to cool.

These can be made ahead and reheated in a slow (150ºc) oven for 10 minutes before serving.

My wife has been making these for a while now and they are always quickly devoured when they appear. Only thing she does different is add a little brown sugar and water to the onions to help them caramalise.

Looks great, and very simple.

Might be able to make these with Ricotta? I have some in the fridge.

I can see the bacon being easily substituted for panchetta, proscuitto even smoked salmon.

Made some today. Very delicious and wish that I made more. Unfortunately I did not have enough patty tins so I made 9 medium ones instead, cupcake size. All I can say is +1 to bacon and perhaps more onion.
