Default lumps in bacon

Today for lunch i had a bacon sandwich .
It has lumps of solid white stuff in it i'm not sure what it is.
Its white sort of bones like?

You get those in cheap bacon. Im some cuts they line up along the fatty area. Not sure what it is though sorry, some form of cartilage?

It's just cartilage - bacon comes from the belly/ribs of a pig - just depends on how it's been butchered/trimmed.
