My house mate was at the markets this week and got a stack of fruit n veg. I know its hot weather at the moment but i decided to make a killer soup.
Didnt have and stock so i just used french onion soup powder with water (litre) instead. The results were awesome. Chop into small inch square portions ... 5 Potatoes 1 Small Butternut 3 large carrots 1 large white onion place into a large saucepan with 1 litre of water with french onion soup mix. also place in 3 cloves of garlic 1 table spoon butter 1 table spoon olive oil 3 dessert spoons worcestershire sauce good pinch of sea salt cracked black pepper to taste place lid on saucepan and heat on LOW for about 40mins - 60 mins stirring occasionally. You could place into a blender but i like texture so i just mashed with a potatoe masher (less dishes too )let cool for a couple mins Ladle into bowl with a dollop of Sour Cream, sprinkle some parsley and some crunchy bread on the side. If you wanted some meat you always chop up some bacon and place in the mix with the rest. adjust the salt to taste though Best thing is this is filling , healthy & cheap! my vege soup recipe (tho yours sounds pretty nice too like a mix of pumpkin and vege soup):
3pc x ozzo bucko or gravy meat pearl barley two spoons cut fat off rinse em off, put them in the pot to boil. 1/2 cup harpers/mckenzie soup mix water boiling French onion soup whisk around water boiling leave it for a while take meat out cut meat into pieces onion celery carrot garlic tomato paste leeks instant potato if not thick enoough beef stock powder salt at the end as you need to bacon if you want cook with a thick base saucepan good with garlic bread. |

Wouldn't you really call this Minestrone soup? Like isn't that what vegetabal soup is?
Regardless, the best Veg.\Minstrone soup I've ever tried was at a friend's house - his Mum made it. That + toast dippers = awesomeness
