On laptop power supplies are you able to change the (jug plug) end and fit an Australian standard one? Or is the only way to get a power converter?

Any reasonably modern laptop will have a PSU which can accept a wide range of voltages. Even my old Toshiba T2000SX (386SX-16) can work on both 110v and 240v.
The biggest issue will be if it doesn't use a standard plug for the power supply. Quite a few of them use clover-leaf connectors, which are fairly uncommon. This isn't a huge problem - it just means that you'll have to spend ~$15 on a new power cord.
