These are one of my favorite foods, and I really wanted to have a go at making them... will make them better next time around - but this is what I did:
Dough: 2 sachets of yeast, mixed with 2 cups of WARM (not hot) water. 4 tablespoons of olive oil 2 tablespoons of sugar 2 teaspoons of salt 4-5 cups of plan flour (depends how soggy your mixture is) Ingredients: Peperoni (100grams) Leg Ham (200 grams) Olives (about 100 grams) 1 green capsicum, sliced Mushrooms, sliced, 200 grams Parsley 2 garlic cloves mozzarella cheese Jar of pasta sauce 1 egg Add all of your ingredients into a mixing bowl and kneed the dough together until its nice and springy, add more flour if needed, then cover and let sit for 30mins. Just before your dough is ready to use, saute the mushrooms for a few mins, with some olive oil and finely chopped garlic, leave to sit once done. Sprinkling flour as you go over -everything- (don't be afraid! ) use a rolling pin to flatten the dough into 2-4 pizza'ish looking circles, depending on how big you want them. My recipe made two huge ones, I'd suggest make 3, or 4.Slice and add all of your ingredients into the center, season with a bit of salt and pepper and then roll the sides up being very careful not to break the dough, then us a couple of spatulas (or egg flippers) to get the calzone onto a baking tray. Mix your egg together, and brush over the top of the calzones, then cook for about 30mins or until they look really nice and brown! Just before you serve them, heat up the pasta sauce, and pour a covering of it on top. ![]() ![]()

These make an awesome work lunch. Make them up the night before and put it in a pie oven an hour before lunch (Or microwave if you dont have anything else, but they can make them very soggy)

Yeah Pengoz, basically a pizza folded in two. I wonder if Calzone counts in the pizza challenge?

Yeah, it sorta is! Although you're not meant to put the tomato sauce mixture inside, it is poured on top like a gravy.

Is that a traditional thing? Cos I haven't had a calzone with tomato sauce on the outside, even in Italy. Mind you, the only calzone I had in Italy didn't even have any tomato on the inside? And I haven't seen it in Sydney either.

They're all over the place in Adelaide? From what I was reading on the net, it's traditional to have a dipping sauce for it I think...

every calzone i've had (not many, but enough) has had tomato sauce or bolognase sauce (complete with mince) poured over the top.

yeah it's weird, calzone is everywhere in adelaide but nowhere in sydney
the first time i ate calzone was at some cafe on grange rd, findon (sth aust) pretty good i must say

Calzones rock my world. I had an awesome one at an Italian restaraunt in Maleney early in the year. Kicked the ass out of every other calzone I've had. Though the chef insisted that he invented the Calzone, which I have to suspect he's a bit off.

Calzones can be deep fried as well as baked and it depends on where you are as to if it gets served with any sauce. So it is pretty much a pizza folded in half then deep fried. Hence the half moon shape.
Technically what the op has made there is a Stromboli. Very much the same as a calzone. They can both be made with the same ingredients but Stromboli's are made in an oval shape and are always baked. Created in America of all places in the 1950's. I love learning about food. Thanks internet!
