I saw something on foxtel about hot dogs in the USA, and I saw someone make a chili dog and it looked fantastic! So I've made Chili Dougs at home and took a couple of pics.
First make a batch of chili. I made enough for about 6-8 dogs, so you can vary it from there. 1 diced onion 2 tsp crushed garlic 2 tsp chili powder 2 tsp dried chili flakes 1 tsp smoked paprika 1/2 tsp ground cumin 5 splashes of tabasco splash of olive oil fry this off for a minute or two, then add a 400gm tin red kidney beans (thoroughly rinsed) and 400gm beef mince, Once the beef has browned, add 2 diced sticks of celery and one diced red capsicum, one tin of diced tomato and 2 tblsp tomato paste. Get it to bubbling point, then cook this on low for a while (I turned the burner on and off for an hour, but 15 minutes on low would be fine, just keep stirring so it doesn't burn). ![]() Once you've made the chili, it's obviously fairly simple. Butter the buns, add a cooked sausage (I used italian pork sausages), the chili you've just made, grated cheese, american mustard and sliced spring onions. ![]() It's a pretty simple dish, and the chili is obviously versatile (nachos etc), but combining with the other stuff to make Chili Dougs is a dish you will eat way too much of! Hmm. My kids and wife can't handle hot chilli - just how hot is this (compared to say Nandos or oPorto chilli and the like)? Would it still taste OK without the chilli powder and flakes? I think they'd be OK with the tabasco alone ...

kinda on the spicy side. you could always just make it without tabasco or chilli's and have a bottle of tabasco so people can decide how hot they want it? keep the smoked paprika though (if you have it), it's not spicy but adds a great flavour to it.

Cool. It's always tough to tell how spicy these things end up when different cooking methods create different strengths
![]() Edit: It was made without the chilli and was found to be ... quite bland really, even for the non-lovers of chilli. It needs at least a little of the chilli (perhaps 1/2 the chilli powder) to liven it up a bit. Also recommend a little more garlic; and make the buns bigger and more solid (the typical buns from your Tip Top and so forth are too fragile).
