Default Cevapi - How do you make them?

Guys,

Being an Aussie with a Croatian background, I grew up having Cevapi every time we went over to Croatia for a holiday. If you haven't had them, they're freakin' awesome - sort of mini skinless sausages in a turkish bread roll.

I've tried googling the recipe, and I've found far too many variations, so hopefully someone on here can set me straight.

What is the 'traditional' way of making them? Some recipies use Beef, and others use a combination of beef, pork and Lamb.

I guess most of the other countries in the region would make them, but surely the recipe can't be that far different?

mince sausages...

I use kg of meat (pork / beef mix if u like), garlic, salt, 1tsp baking soda, pepper, cayenne pepper, and 1 egg.

Just mix em up, and form into sausage shapes.

I am an Aussie With Cro background as well

Cevapi with a hot crusty bread roll is a WINNER!!!

We normally buy ours from a Croatian butcher as most places like to keep their cevapi recipes a secret, but going by the post above, doesn't seem too hard

Wow, Those look great!, I found two recipes for this, neither are czech, but they look about right, and there is often alot of cultures who claim the same food items as their own

Traditonally its 50%/50% pork/beef as lamb wasnt, and still isnt too huge in the balkans. Other than that, some garlic, salt, pepper and some paprika powder for some kick. Roll them up very compact and make sure they dont fall apart. Its a very rustic sausage so you dont really have to stick to measurements if your a half decent cook.

I didn't get a chance to make them on the weekend, so I'm going to try for later this week. Quick question though - there is an ingredient called "vegeta" or something like that mentioned in some recipes - is this a must, or just a repalcement for some other ingredient?

Vegeta is just vegetable stock, its pretty common in vegetarian meals to add flavour (you can use it as powder instead of as a stock)

vegeta is just a brand of stock powder.

Personally the mrs has put me onto Massel brand stock powder. Its a vegetarian one (even the chicken and beef are vegetarian). It doesnt have a nasty after taste that some stock powders have.

My problem has been solved!!!

Solution: Don't make them. Buy them from a Croatian Butcher.

For those of you in Melbourne, there is a Croat butcher in springvale, just after the train lines. I think the name starts with "D", but mum picked up a kg of Cevapi from there for $11, and they are awesome

Yeah, I know. The ones from the butcher are probably only 70% as awesome as the ones overseas, but concisering that I haven't been back there for something like 18 years, I'll have to settle for second best

They're sold from Slovak butchers and coles as well.

And everyone knows you eat them with diced raw onion layered on top

The coles ones are ok, but nowhere near as good as the proper ones.
