Default Lots of Bacon + Pasta = Carbonara

The Pictures dont do it justice but this is super creamy & even better with loads of heart attack bacon to boot SERVES 6 ppl

INGREDIENTS:
375gm Egg Pasta (not normal pasta - there is a difference)
8 Rashers Bacon
1 brown onion
7 Mushrooms of choice
3 cloves garlic
200gm Parmesan Cheese
2 Eggs
300ml Cream
Pinch Salt
Pepper
Garlic Salt
Onion Powder
Parsley (optional)


Method
  • Chop the bacon, onion, mushrooms & Garlic
  • throw into the frying pan on a medium/low heat - for about 15-20 mins til it has reduced
  • Crack 2 eggs into a seperate bowl & add salt, pepper, garlic salt & onion powder
  • Beat then add 300ml Cream
  • Combine & add grated cheese (i only had a small amount of parmesan so i added a little bit of other cheese aswell)
  • Add some Egg Pasta into boiling salted water
  • When cooked drain and add to the bacon mix.
  • Pour the cheesy/egg mixture over the top & mix very very well (the residual heat will cook the mixture)
  • Add a sprinkle of parsley & your ready to go!

Garlic bread or crunchy fresh buttered bread goes well too

Looks delicious! I make a similar recipe but without the egg. I'll have to give it a go on the weekend.

Haha... I have a similar recipe but without the cream .

I think this is actually a Boscaiola if we're going to be picky about it. But it doesn't make it any less tasty!

Looks good, but I think you need to cut the bacon a bit finer.

sorry i should of been a bit more specific

you dont need to cook the mixture - just pour it onto the hot pasta give it a real good mix and the residual heat will do the rest

Perhaps yes .. i admit my presentation leaves a lot to be desired ... it was rather late for dinner and i had a case of the cbf

There is way to much in that pan / pan to small...

It shouldn't need 15-20 minutes of frying. But because your pan is so full its more of a steaming you are getting...

And you don't throw it all in together.

First you brown the onions, then the mushroom then the bacon.

The food on the pic does look a bit undercooked / raw...

Use a bigger pan and put less bits in.

Also you can buy diced bacon in a pack :-)

while i do agree with you. i must reiterate that it was late. most normally i use my electric wok which also makes it easy to mix the ingredients at the end.

So if you guys want it to be easy .. do it my way
If you want it to have a bit more of a flavour kick do it the right way and follow the post above ...

I would not have cooked your bacon, onion, and mushrooms all together....

It kinda stop having layers of flavour...

I kinda like my mushies to taste like mushies, not like bacon-onions :P

I generally always start with bacon in a dry pan. There's plenty of fat that will come out of the bacon. If I cbf, I'll take the bacon out then add in the onions, once soften, add the mushrooms. Otherwise onion goes in and then the mushroom all in one pan. Mind you, I generally leave out the onion and just add loads of garlic

i may have put this in one of my other posts but a tip for cooking bacon. If you start put the bacon into a cold pan rather than a warm one it will render off the fat (which you can pour out) thus making it a little bit more healthy.

Looks nice, I've never made one with egg before.
I felt like a cabonara this week, but budget and calories said no.
I just used garlic and onion, a tin of cream of mushroom soup, and steamed broccolli and zuchinni with heaps of parsley

Would still get mixed together when you serve it...

I cook the onions first, then mushroom and bacon goes in last...

If you need to eat quick just serve this on pasta and it will be just as good :-)
