Default Raspberry & Coconut Slice

It was meant to be the mrs making something today cos her family were paying us a visit this arvo. Somehow the tables got turned and i got the job.
Tis an old recipe mum used to make when i was a kid.
I decided to give it a whirl...

INGREDIENTS:

Base
125g unsalted butter
1/3 cup custard powder
1/3 cup plain flower
1/3 cup caster sugar
2 eggs
1 tsp vanilla essence
3/4 cup rasperry jam (warmed)

Topping
2 eggs (seperate yolk and whites)
1/3 cup caster sugar
1 tsp vanilla essence
3 cups dessicated coconut

METHOD
Preheat Oven to 180C
To make the base
Brush the base of a 30x20cm pan with butter
Line with baking paper
Place butter, Custard Powder, Plain Flower, Caster Sugar eggs and essence in a food processor (or if your like me just put in a bowl and use a fork) and mix til it just comes together
Spread mixture evenly over the base of the tin
Bake in preheated oven for 20 mins
LET IT COOL
Layer the warmed jam onto the base

To make the Topping
Beat egg whites in a small bowl until stiff peaks form
Add sugar gradually beating well after each addition
Transfer to a large bowl
Add egg yolks and vanilla essence
Stir through the coconut
Spread topping over the slice
Bake for a further 20 - 25 mins again at 180C
Allow to cool a bit and serve with some double thick cream

Makes about 18 slices
Keeps well for 3 days in an air tight container at room temp
I doubt it will last that long

Oh god, I love this stuff. I cant help but buy a peice every time I'm near a bakery.

Same! Tis my favorite....Not a lot of bakeries have it anymore though.....

Made this a few days ago. Unfortunately the base came out sort of like a rubbery caramelised thing. Any suggestions?
