Poor mum was feeling a bit down in the dumps after her father died yesterday. She has a Husband and Students from Hong Kong to feed so i thought i would cook for them. Food is a great way to open up conversation in our family and make us feel relaxed and united.
So a bit of a google and off to the shops and then to cook some stuff i hadn't attempted before. INGREDIENTS: Crepe Mixture
Mascarpone Mixture
Balsamic & Strawberry Mixture
White Chocolate Sauce
METHOD Whisk the eggs and sugar until sugar is dissolved. Gradually whisk in dry ingredients until thoroughly combined. Add the milk and whisk to combine Pre-heat a small non stick frying pan or crepe pan and brush with a little melted butter. Add a small ladleful of crepe mixture to the frying pan. Tip the pan to ensure the mixture covers the pan. Once the edges are browned it is cooked. Turn with a spatula to cook the other side. This will take approximately 4 minutes each crepe. Mascarpone mix: Beat the yolks with the sugar until combined, and then fold in the mascarpone. In another bowl, whip the fresh cream. Fold into the mascarpone mixture. Dice 1 punnet of the strawberries and marinate them in 2 tablespoons of aged balsamic. Combine chocolate and cream in a bowl. Place bowl over a pan with boiling water on low heat and allow the chocolate to melt. Then leave aside to cool. To serve fill a crepe with the mascarpone mix and then some of the marinated strawberries then fold into a square. Place a few tablespoons of the chocolate sauce into a pasta bowl and place a filled crepe on top. Drizzle with a teaspoon of aged balsamic and garnish with a sliced fresh strawberry. ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]()
