Ok, so basically I want to Build something like this on the cheap:
http://eltech.co.uk/rackmount_server...s/mbx_1736.php Not *that* concerned re cpu/ram/disk specs at this point, just trying to work out the best solution for 6 x eth ports in a 1U box. Most motherboards will have 2 ports on board and then the obvious way to go is a 4 port with riser to achieve 6. Any other thoughts/suggestions/cheap ways to achieve this?

What you have said is the best way. Although some 1RU cases have a fullsize PCIx port on the side that you can put a card in with 4 LAN ports. not 100% sure where you get them from. As I haven't ever used one.
I would wonder why someone needs that many ports though, unless you are using VLANS or seperate physical networks..

Intel Server board with 2 onboard NIC's (there's a bunch, pick one).
2x Intel® PRO/1000 PT Quad Port Low Profile Server Adapters. Supermicro have UIO for this reason. Allows multiple LP adapters in 1RU units. This doesn't belong in Business/Enterprise Computing.

Dell R610 can come with 4 GigE onboard.
Add a quad port PCI-x card, and you're golden. Quote:

personally i''d be going down the dual port 10G NIC/CNA rather than an octopus spaghetti moster approach to lan cabling...
