Got myself this phone the other day, and loving it.
Instructions are bare though and I've never used an Android phone before, nor know anything about the OS. 1. Is there any way to uninstall applications that came with the phone? E.G Weather, Stocks, Peep, and other shit I'm never going to use (also 2 calendars and 2 mail programs?!?!) 2. Is there a decent notes program which will display my notes on the HOME Widget? 3. Is there a flashlight program which will allow the flash to be used as a torch? 4. Is there a photo editing program which will allow better cropping/resizing? I think that's about it at the moment. 1: no straightforward way to do so. It is possible it you want to root your phone (voiding your warranty in the process), but otherwise its impossible from the device itself.
2: Go to Add widget -> Find more HTC widgets, and there's an in house notes widget there. I don't know about other widgets though. Not sure about the other two, but hope my answers are helpful.

and are these phones subject to viruses like other operating systems, or nothing yet?

Nothing past proof-of-concept yet. Smartphones will be targeted pretty soon though, and I'm hoping AV companies have something ready.
