Does it include an arcade monitor already? Or has that been removed?
If not, my only advice is cram the largest monitor you can in there. Big cabinets with little monitors look quite ugly. There's a few blokes on this forum who've built/restored a few cabinets each now. Ask specifics and I'm sure you'll get plenty of detailed answers.

Advice: dont use a crt monitor. Get a tube out of an old TV, get a jomac chassis and get an ArcadeVGA graphics card.

You don't need an ArcadeVGA. It's certainly easier (for Windows users), but tools like Soft15KHz (or custom modelines in Xorg, which is how I do it in Linux) allow you the same freedom without the cost of the ArcadeVGA unit.

Good stuff. Should be a fun project.
I'm in Brisbane, so if you need a hand with anything, just yell.
