do you guys think a 560 ti would be enough to run 2500x1600 at acceptable fps.

or spend the extra $100 to get the 570?

No.

And for that resolution I would go the the best AMD card you can afford as at 2560 x 1600 they perform better then the NVIDIA options.

No, unless you're playing old stuff. Even the 570 has trouble at 2560x1600 in some games.

Probably has something to do with the fact that they had to wind back the GPU's so much to fit onto a dual GPU board.

So whats the general concensus of the GTX 590

Overpriced
Performance is nothing special

The cons on the card are

It's very expensive for what it is.
Out of the box it performs around the same level as GTX 560 SLI Overclocked / HD 6950 CF. Not enough for some people, considering the price.
The Poof Poof Smoke isn't really NVIDIAs fault.

The pros on the card are

It's shorter then the HD 6990
It's quieter then the HD 6990
In NVIDIA games it performs stronger then the HD 6990, Eg, Mafia II / Lost Planet 2
