Bledisloe Pulled Pork

    I like to do a Pulled Pork for Bledisloe games (or whenever I get the slightest opportunity to be honest). This weekend's match looks set to be great, so of course I'm preparing my weber kettle.

    Have a 2.5kg Pork Collar set aside by my local butcher. Will rub a few hours before placing on the bbq. Rub I tend to use is usually something like:
    • 1/4 cup/60 mL paprika
    • 2 tablespoons/30 mL salt
    • 2 tablespoons/30 mL white sugar
    • 2 tablespoons/30 mL brown sugar
    • 2 tablespoons/30 mL ground cumin (cumin powder)
    • 2 tablespoons/30 mL chili powder
    • 2 tablespoons/30 mL freshly ground black pepper
    • 1 tablespoon cayenne pepper
    Probably clean and prep the BBQ friday night. Often use the snake coal method and will use that again here. Expect it should take around 8hrs to get up to around 90c internal and one hour rest. Probably place on BBQ around 9am.

    ... also, go All Blacks :p
