Brined, Smoked & Steamed Pastrami

    Hmm... its been a long time since I've posted a recipe to geek food.

    This isn't so much a recipe (the one I used can be found here.) But I know we all like pretty pictures right?

    This recipe takes about a week in total to make.

    Start off with a piece of beef brisket, ask for the point rather than the flat. The flat has bugger all fat and will give you a dry yuk brisket.

    Then brine it with salt, cure #2, pickling spices for 5 days.

    After those 5 days, you want to remove a little bit of the salt, so soak in fresh water overnight.

    Then rub with a pepper-heavy rub.

    And smoke (I recently made a UDS) for about 10 hours or so. I used hickory.

    And this is the underside with a chef's delight removed - look at that tasty bark.

    Then put it in the fridge overnight. The next day you want to steam it to about 95C internal temperature.

    Then let it cool and slice.

    And with it I made my take on a Reuben. I know I know... no rye bread.

    It tasted awesome. The only thing I'd probably do next time is grind the pepper a little finer than what it is. Total cost was about $20 and that meat will provide more than enough meat for sandwiches for a week or so.

    Yeah, an Ugly Drum Smoker. Holds the temperatures amazingly well, so much easier than smoking in a Weber Kettle.

    ugly but efficient I guess.

    The price of those komados is ridiculous and the capacity not all that great.

    this might be first venture into smoking.

    cheap and easy and gets results.

    Yep, I already had a weber grill, so all of the parts cost me $75 to put it together and it works fantastic.
