A variation of this is what i put up at the the Red Head bbq festival comp in melbourne. a great "base" to add to, in my case i stuffed wingets with cream cheese and jalapeno's Ingredients Chicken (wings, wingets, drumets or drumbs) Buttermilk (i can only describe this stuff as runny yogurt, its the base of an indian lasi) Rub 1. prep your chicken by cutting away large pieces of fat 2. add enough buttermilk to a bowl to coat all the chicken and let soak for about an hour 3. bring bbw to 250-300f 4. place buttermilk chicken pieces on the barby. about 20mins in sprinkle with your favorite rub and turn. 5. these are done once a light brown, they will be pale in colour but check the internals for temp. at 250 it should take about 40-60mins for a slow cook cooking time is about 60mins here are the cream cheese and jalapeno stuffed ones 599110_10152076400174240_184445655_n by Brett Robinson, on Flickr
