Chock mint vanilla-ey icecream cake

    So i made an icecream cake recently

    Had the following

    3L of vanilla icecream
    3L of chocolate icecream
    3 Packets of no name brand mint slice chocolate biscuits
    2 Packets of anzac cookies
    2 Tablespoons of butter

    Line a (very large for these quantities) cake tin or deep lasagne pan with baking paper or cling wrap.

    Top layer is vanilla icecream. Leave it out of the freezer for 10 mins or until it gets a bit squidgy. Pack it evenly across the bottom of the pan.

    Put the mint slice biscuits into the blender and blend em up good! Layer this across the top of the vanilla icecream.

    At this point its a good idea to put the cake in the freezer for about an hour or 2 to get it back to solid as to help with the next layer.

    Next we put the chocolate icecream in on top of the mint slices.

    Blend the anzac cookies and mix them with about 2 tablespoons of butter to bind them.

    Pack them over the choc icecream.

    Put it all back in the freezer till you're about ready to serve. A nice touch is to do any writing in ice magic (protip: the aldi brand ice magic comes in one of those bottles that you HAVE to squeeze before anything comes out. Makes it really hard to write on the cake with it (as you will see in the picture).
