First post in the Recipes session so no hatings haha I joke, please be totally honest. Ingredients: Chocolate Mousse 160g of dark chocolate (I used Lindt 70%) 3 Eggs - Separated into Whites and Yolks 3 teaspoon of icing sugar Raspberry Compote 170g of Raspberry (I used frozen) Icing sugar (to adjust sweetness) Method 1. Place the raspberry and a teaspoon of icing sugar into a small saucepan over low heat, stirring occasionally (try not to break them) until the the raspberry have soften and liquid has been release. 2. Add extra icing sugar to adjust sweetness and mix in and put aside to allow raspberries to cool. 3. Melt chocolate ( I used double boiler method) 4. Add egg yolks one at a time to the melted chocolate and mix in well. 5. Whip egg whites until soft peak while gradually add icing sugar. 6. Take 1/4 of egg whites and mix into the chocolate mixture, then fold remaining egg whites into the mixture. 7. Assemble the dessert. Picture: Click to view full size!
