Chocolate semifreddo

    Chocolate semifreddo :thumbup:

    4 eggs, separated
    200g caster sugar
    500ml thickened cream
    3 tablespoons cocoa powder,
    2 handfuls of chocolate bits
    1/4 cup warm water
    gladwrap
    small cake tin


    Method
    grease tin and line with gladwrap
    beat egg yolks and sugar until white and creamy.
    Wash and dry beaters.
    Beat eggwhites until soft peaks form.
    Fold eggwhites into egg yolk mixture
    whip cream until soft peaks form.
    Combine cocoa and warm water in a small bowl. Stir into cream.
    Add choc bits
    fold chocolate cream into egg mixture
    Spoon into cake tin with gladwrap lining.
    cover with more gladwrap and freeze overnight, or until firm.
    Sprinkle with more cocoa and choc bits to serve


    Variations:
    a/ For rum and raisin chocolate semi-freddo, soak 1 cup raisins in rum
    Stir into mixture in step 3 with chocolate cream.

    b/ substitute instant expresso coffee for cocoa

    I don't see any Freddos in that recipe :thumbdn:



    loljkz, looks very sugary and delicious for sweettooths

    I suppose it is up to you what shape of chocolate bits you use.
