Cornflake Cookies FTW

    Ok there's no rocket science baking in this thread, so consider this baking 101.
    I don't really eat shop bought biscuits, and it had been the longest time since i had made some.
    As luck would have it there were some cornflakes & some Sultanas in the pantry.
    Woo! Mrs TARD doesn't like Sultanas so i knew i was going to get the lot :D
    What a piggy...

    This batch makes about 2 dozen.
    I think it took me about 3 days to eat them all :shock: I have no regrets.
    Oh well i can always make more.

    Prep: 5 mins to mix stuff in a bowl
    Cooking Time: 13 - 15 in the oven.

    Ingredients:
    • 125g Butter (yep real butter)
    • 2/3 cup Caster Sugar
    • 2 tsp Vanilla Extract
    • 1 1/2 Cups S.R Flour
    • 1 Tablespoon Whole Milk
    • 1 1/2 Cups Cornflakes
    • 1/2 cup Sultanas

    Method:
    1. Preheat oven to 160 deg C (Fan forced) or 180 deg C Traditional

    2. Line 2 trays with baking paper

    3. Use a hand mixer / electric mixer to mix the butter, sugar & Vanilla in a mixing bowl till nice and creamy

    4. Switch to low speed and gradually add in the flower until its just combined

    5. Add in milk til a dough/batter is formed

    6. Use a wooden spoon to stir in the Cornflakes & Sultanas

    7. Place 12 Tablespoon sized dollops onto each tray - leaving a nice gap between each (they spread when they cook)

    8. Squash lightly with a fork

    9. Cook for 13 - 15 mins til desired brownness (you may swap the trays over half way through to make sure they cook evenly)

    10. Sit for 10 mins to cool

    11. Smash into your face repeatedly whilst drinking coffee/tea :thumbup:

    The fact that you have them all to yourself and tie a bow around them before you eat them is a little disturbing...apart from that, looks good :D

    I used to love these things as a kid.

    How awesome would they be if you used crunchy nut cornflakes.....

    Personally i find it more disturbing that there is a broken up cookie on the plate!

    Thats a fabulous idea for my next diabetic Cookie adventure :)

    I made another batch about 2 days ago.
    Between myself, the mrs and a few drop in guests ... they didn't last more than 36 hours :mad:

    I'm sure they won't last long aushostdog :)
    So tempting to eat them when they are still hot.
