Creamy Potato Bake

    Ingredients:

    • 6 Potatoes - peeled & thinly sliced
    • 8 Rashers of Bacon - sliced
    • 2 large Brown Onions - diced
    • 3 fresh grated cloves garlic
    • 1 tbsp Olive Oil

    • 300ml Bulla Thickened Cream
    • 1/2 cup Full Cream Milk
    • 2 eggs
    • 2 tsp Onion Powder
    • 1 tsp fresh cracked black pepper
    • 2 tsp salt
    • 1 cup Grated Cheese - Tasty & Parmesan works well
    • 1 cup breadcrumbs


    Method:

    1. Remove the rind & dice your Bacon, Slice Onion very thinly.

    2. Cook them in a fry pan with 2 tbsp Olive Oil and some grated garlic over a medium heat for 8 - 10 mins until the onions are nice and soft.

    3. Meanwhile, begin to grate your cheese and THINLY slice the 6 peeled potatoes.

    4. layer the ingredients into any oven proof bowl.
    • Potato
    • Onion & bacon mix
    • repeat until you have run out of ingredients.

    5. Place the eggs into a large bowl and whisk lightly.

    6. Stir to combine the Bulla Thickened Cream, Milk, Onion powder, black pepper & salt.
    Taste for seasoning. Ideally it should be slightly too salty as it will become 'less so' when eaten with the potato mix.

    7. Cover with foil and bake for 60 Mins @ 180 deg C
    Remove and add grated cheese & bread crumbs
    Return to the oven with out the foil for 25 - 30 mins more, until the texture is slightly browned and crisp to the touch.

    Let sit for 15 mins to cool before serving.

    I do mine without bread crumbs, but drop a little lemon juice and anchovies in it :thumbup:

    My new housemates have just introduced me to anchovie infused potato bake... very nice but still... Will never beat my mums!

    Love the sound of the anchovies, too... I think the Mrs would like it just so long as she doesn't know what it is...

    This is heaps different to your original recipe a few years back, mine is much simpler like that one.

    Potato
    bacon
    onion
    garlic
    cream
    cheese
    mustard.
    s&p

    I mix the cream, a good teaspoon of mustard, the garlic, the S&P, and a good whack of cheese and use a bit between each layer of the potato/onion/bacon layers. I allow at least 1 1/2 hours to cook it though, plus a 5-10min rest.

    Cheese on the top for the last 1/2 hour.

    So so bad, but so so good.

    Had not even thought about bread crumbs. Thinking of an excuse to make this in 3....2.....1
