    Do you just sign up for the 'Free DNS' account with this? Does that provide you with a mx server that I can subsequently create multiple email addresses off it?

    This is not incompatible with cloud-hosted email.

    Most offer IMAP access, so they're stored online AND in your local client. You can do local file backups as you please in the way you describe above.

    Yes, pretty much.

    I have one domain set up that just passes *@mydomain to user@myotherdomain, it just works.

    zuver is a good cheap option for $3/mth and there's usually a good discount code floating around, but it's hard to go past the cheapest Office 365 business plan for like $7/mth as you also get a shit ton of other cloud software with it...
