    I actually can’t give her anything, she’s allergic to wait for it… chicken, beef, lamb and pork…. She gets lots of fish, kangaroo, crocodile, duck and dry food that has now gone up to $200 dollars a bag… so why I do feel bad she can’t get any scraps from the kitchen I feel much worse for my wallet

    Looks lovely. I actually attempted a Laksa just last week. Ended up a bit tasteless tbh, not sure what I did wrong, had to ad a little salt for some sort of flavour. Plus I cut some of the veges a little big. Not ideal but was still edible : )

    Recent dinner party cookup.

    Pork belly 2 ways (Crispy and burnt ends), pineapple salsa, lime crema, corn ribs, guac, cornflour wedges and home made flour tortillas (you'll never go back to store bought after making them).

    Looks delicious, I like the presentation too. "Served on a wooden plank" works well for this. :)
    I've been wanting to try making my own tortillas from scratch for ages, it's like "Bakery For Beginners" right?

    Necessary Secret Weapons for saving a bland-tasting Southeast Asian-style cookup; somewhat interchangeable depending on what you're cooking:
    1. Fish Sauce (substitute Soy Sauce, use salt as a last resort)
    2. Maggi Liquid Seasoning (substitute chicken stock powder dissolved in hot water)
    3. Kecap Manis (use sparingly to avoid adding too much sweetness)
    4. Sesame Oil (a few drops are usually enough to add a little hint of nutty/savoury flavour that might be missing)

    Portuguese chicken cooked over coal and cherry wood, smoked first at 160 degrees for 1.5 hours then cranked heat for another 30 mins or so came up a treat! C8880AE8-C475-4160-8E96-1891617EA7A2.jpeg

    I’ve got some mates over tonight. Will be smoking some beef, cheese and jalapeño snags. Making sticky BBQ lamb riblets and Mac ñ cheese.

    Lamb ribs are still some of the most underrated and therefore affordable good smoking meats atm in my opinion. Looks the goods

    100% all those lamb ribs were $27. The same amount of meat for pork ribs would be $90… and honestly it’s tastier

    Lamb rack was about $33 and worth every cent, very tender and juicy.

    That’s a great price where a Chuck steak is costing $20+ at the moment I know what I’d prefer.

    And having a qualified butcher pre-slice and trim that rack into cutlets adds $10 per kg?

    made this the other day.

    2.8kg of uncut porterhouse, i sliced into super thick steaks.

    cooked one for dinner between medium rare and medium, just with some salt :)

    Served up a couple of Wagyu steaks tonight, at $65 for two it's not something I do often, but delicious :thumbup:

    Tell ya what, took me all my time to get through it, was big!
