    Amf Vic Market has 2-3 butchers that age meat, I bought 35 day stuff. If you want a specific cut just order it from them :thumbup:

    I've never been a fan of meat that has so much fat through it done less than med-well.

    I think in 20 mins i had made a big mess and loads of these Peanut Butter Eggs
    I don't really like peanut butter that much ... but they must be ok because Mrs RETARD ate about 50 of them over 3 weeks :o

    I know. As does my regular butcher (Gary's in Prahran market). What I am talking about is 150 day dry aged beef with good marbling, like the one posted earlier. You won't find anything like that in Melbourne.

    maple cured and smoked salmon.

    Duck, deboned, meat-glued and rolled. then cured it a wet brine of molasses and PX and then smoked.

    Chicken Breast Roulade.

    Two chicken breasts joined with Transglutamise, wrapped in Proscuitto ( also joined with T ). Cooked Sous Vide @145 t 65C Then chilled and pan roasted.

    Its pretty much sticking a can of beer up the chicken and roasting it.

    But I did more
    a) Brine the chicken overnight
    b) Pat dry.
    c) Rub Lemon, and then greek seasoning
    d) Roast chicken with half full beer can up its butt.

    Hot or cold smoked? Looks like a hot smoke. I take it the maple makes it look more orange than usual. I have to say some of the Salmon sides I saw in Hobart near Christmas looked like crap, pale, little oil and probably was frozen at one stage.

    Hot smoked! Caught it in the San Francisco bay and brought it as stowed luggage back to Austin texas ( fillited, vac packed and frozen obviously ).

    Nothing wrong with freezing fish, especially if its snap frozen. In fact if you're eating sashimi style you actually want it to have been frozen to kill off the parasites and other wacky stuff. If you go to a sushi place and they insist their fish is fresh.... go elsewhere :)

    Hehehe. Frozen fish can be OK but I find it not done properly it isnt that good. I guess I am biased as my family could get, just caught salmon from the farms down here and it was great for sushi.
