    Potentially a silly question.

I’ve been playing around with using IEM’s for gaming and I’m looking for a mic solution.

I like the look of the RODE NT-USB. Can I use the headphone jack on these for in game audio or are these purely there for Mic monitoring?

I don't have that unit, I have a Blue Yeti, but the answer is "yes", as the point is to allow you to hear your voice compared to whatever the background sound is, so you can tell if your settings are right, or if you're too loud or too quiet.

Yes, Windows sees this as just an ordinary audio output device - it just also has a hardware feature that can mix in the mic audio for monitoring.

Incidentally, I'd look up some sound samples of the NT-USB vs the NT-USB Mini - in my opinion the newer, theoretically-less-fancy version sounds better.
