Unmount all drives when asked, just before partition otions.
Choose use whole drive, make sure is correct drive (assuming using USB so size should be larger) should be /dev/sda.
Be sure to choose correct option when it displays partions it is writing as you need to tab to ok/yes to write the table.
Lastly be sure to write the grub boot to /dev/sda when asked.

If you're just playing with the server, sure, install to one giant root partition.

If you intend to do something a little more serious, then consider:
    • Minimum 8GB partition for / (root)
    • Minimum 8GB partition for /var
    • Rest of drive for /opt or /srv or /home
    • No real need for swap on a server
Also consider only using LTS releases for server installs (current one being 18.04, next one is 20.04).

While you're there, get the entire system up to date with "apt dist-upgrade" too.

FYI, recovery mode is in the boot menu just before the OS starts to boot. Second option.

    But glad it's all working.
