Lemon Coconut Slice

    I used the recipe from exclusivelyfood.com.au

    Ingredients:
    80g butter
    250g (3/4 cup) sweetened condensed milk
    250g Nice biscuits (we use Arnott's brand) * I used Marie biscuit instead*
    85g (1 cup) desiccated coconut
    1 tablespoon (20ml) fresh lemon juice

    * Line 18x28cm pan with baking paper
    * Stir butter & condensed milk over low heat in a small saucepan until the butter has all melted, let it cool down and add 20ml fresh lemon juice
    * Finely crush the biscuit with food processor or blender .
    * Mix the crushed biscuit with 1 cup of desiccated coconut in another bowl and then add the condensed milk mixture . You can use wooden spoon or the mixer - i find it easier to use my Kitchenaid to mix all the ingredients.
    * Press the mixture into the prepared pan and refrigerate whilst you prepare the icing mixture.

    Lemon Icing
    250g (1 3/4 cups) icing sugar
    2 tablespoons (40ml) fresh lemon juice
    1 1/2 tablespoons desiccated coconut, for sprinkling on top of slice

    Note : The icing sets really quickly so make sure you have the desiccated coconut handy / nearby .

    * Stir the icing sugar & Fresh lemon juice over low heat in a saucepan until smooth and well combined. Pour the mixture immediately over the biscuit mix. Add desiccated coconut on top.

    * Refrigerate until firm. Cut & ready to be eaten !

    I love making this.

    Just make sure that you have a good wet:dry ratio, as if it is too dry, when refrigerating the bottom base will not hold properly and may break/crumble when being help up

    May I ask why you used Marie biscuits instead? I used Nice

    my first time making them :D I agree with the wet dry ratio ( thankfully i got mine just right hahah )

    I bought one of those bulk Marie biscuit packs from costco .. so may as well make a good use out of it :p Oh and im not a big fan of nice bikkies :( i know ..shoot me :lol:

    Just tried this, didn't have any icing sugar so I used caster sugar and only roughly half the amount... still turned out way too sweet for my taste. I'm guessing icing sugar arn't as sweet as castor sugar?

    The incredible sweetness comes from the condensed milk.

    If it wasnt for the christmas pudge... i would've eaten the entire batch ( ok ok may be not all :lol: )

    I'm not too sure i find both caster and icing still far too sweet for me.
