I used the recipe from exclusivelyfood.com.au Ingredients: 80g butter 250g (3/4 cup) sweetened condensed milk 250g Nice biscuits (we use Arnott's brand) * I used Marie biscuit instead* 85g (1 cup) desiccated coconut 1 tablespoon (20ml) fresh lemon juice * Line 18x28cm pan with baking paper * Stir butter & condensed milk over low heat in a small saucepan until the butter has all melted, let it cool down and add 20ml fresh lemon juice * Finely crush the biscuit with food processor or blender . * Mix the crushed biscuit with 1 cup of desiccated coconut in another bowl and then add the condensed milk mixture . You can use wooden spoon or the mixer - i find it easier to use my Kitchenaid to mix all the ingredients. * Press the mixture into the prepared pan and refrigerate whilst you prepare the icing mixture. Lemon Icing 250g (1 3/4 cups) icing sugar 2 tablespoons (40ml) fresh lemon juice 1 1/2 tablespoons desiccated coconut, for sprinkling on top of slice Note : The icing sets really quickly so make sure you have the desiccated coconut handy / nearby . * Stir the icing sugar & Fresh lemon juice over low heat in a saucepan until smooth and well combined. Pour the mixture immediately over the biscuit mix. Add desiccated coconut on top. * Refrigerate until firm. Cut & ready to be eaten !
