As per a request on the food pork thread here is my simple mac and cheese. 100g butter 100g flour 4 cups of milk 4 cups of cheese (vintage and aged cheddar) 1 packet Shoulder macaroni The pasta Insert into boiling water and cook until aldente Strain and put to side The Béchamel 1. In a small pan bring milk up to a warm temp 2. In a large saucepan place the butter on a medium heat until only just melted. 3. Start to integrate flour small parts at a time and reduce heat until fully integrated 4. Add a small amount of milk and integrate and then slowly add more until the consistency of cream 5. Add rest of milk and integrate. 6. Add cheese bit by bit and stir until integrated on medium heat 7. At this stage you can add meat, Chilli s ect 8. Integrate maccaroni until a ratio that you feel is good (pasta is cheap) The bake 1. Place in baking tray and the put hot sauce and cheese on top 2. Bake at 200c until golden brown Serve
Bit disappointing you didn't cook this in the smoker mate. I did on the weekend and it really gave the top a nice smokey kick.
