Marscapone filled Crepes with white chocolate sauce & aged Balsamic Strawberries.

    Well Mothers Day is not that far away ;)
    And whilst i didn't make this specifically with that in mind, I can't think of a better way to end mothers day than with this incredible dessert.
    There are 4 simple steps to follow.
    They can all be done before hand so just some minor assembly is required.

    INGREDIENTS

    Crepe Mixture:

    • 3 eggs
    • 1 tablespoon sugar
    • 1 tablespoon cocoa powder
    • 70g plain flour
    • 100ml milk
    • melted butter, for cooking the crepes
    Mascarpone Mixture:

    • 2 egg yolks
    • 3 tablespoons sugar
    • 250g mascarpone
    • 100ml Bulla Thickened Cream
    Balsamic & Strawberry Mixture:
    • 1 punnet strawberries
    • 2 tablespoons of aged balsamic vinegar
    White Chocolate Sauce:

    • 200g white chocolate, chopped
    • 170ml Bulla Thickened Cream

    METHOD

    Crepes:
    1. Whisk the eggs and sugar until sugar is dissolved. Gradually whisk in dry ingredients until thoroughly combined.

    2. Add the milk and whisk to combine
    Pre-heat a small non stick frying pan or crepe pan and brush with a little melted butter.

    3. Add a small ladle of crepe mixture to the frying pan. Tip the pan to ensure the mixture covers the pan. Once the edges are browned it is cooked. Turn with a spatula to cook the other side. This will take approximately 4 minutes each crepe.

    Mascarpone mix:
    1. Beat the yolks with the sugar until combined, and then fold in the mascarpone.

    2. In another bowl, whip the Bulla Thickened Cream & fold into the mascarpone mixture.

    Balsamic Strawberries:
    1. Dice 1 punnet of the strawberries and marinate them in 2 tablespoons of aged balsamic.

    White Chocolate Sauce:
    1. Combine chocolate and Bulla Thickened Cream in a bowl. Place bowl over a saucepan with simmering water on low heat and allow the chocolate to melt. Remove, then leave aside to cool.

    To serve:
    1. Fill a crepe with the mascarpone mix and then some of the marinated strawberries then fold in the edges to form a square.

    2. Place a few tablespoons of the chocolate sauce into a bowl and place a filled crepe on top.

    3. Drizzle with a teaspoon of aged balsamic and garnish with a sliced fresh strawberry & dust with icing sugar

    I just made crepes last night - wish I had seen this then! Looks very tasty... Will make a note for the next crepe day...
