Mascarpone Crepes w/ Strawberries, Aged Balsamic & White Chocolate Sauce

    Poor mum was feeling a bit down in the dumps after her father died yesterday. She has a Husband and Students from Hong Kong to feed so i thought i would cook for them. Food is a great way to open up conversation in our family and make us feel relaxed and united.

    So a bit of a google and off to the shops and then to cook some stuff i hadn't attempted before.

    INGREDIENTS:

    Crepe Mixture
    • 3 eggs
    • 1 tablespoon sugar
    • 1 tablespoon cocoa powder
    • 70g plain flour
    • 100ml milk
    • melted butter, for cooking the crepes

    Mascarpone Mixture
    • 2 egg yolks
    • 3 tablespoons sugar
    • 250g mascarpone
    • 100g fresh cream

    Balsamic & Strawberry Mixture
    • 2 punnets strawberries
    • 3 tablespoons of aged balsamic vinegar

    White Chocolate Sauce
    • 200g white chocolate, chopped
    • 170ml fresh cream

    METHOD
    Whisk the eggs and sugar until sugar is dissolved. Gradually whisk in dry ingredients until thoroughly combined.

    Add the milk and whisk to combine
    Pre-heat a small non stick frying pan or crepe pan and brush with a little melted butter.

    Add a small ladleful of crepe mixture to the frying pan. Tip the pan to ensure the mixture covers the pan. Once the edges are browned it is cooked. Turn with a spatula to cook the other side. This will take approximately 4 minutes each crepe.

    Mascarpone mix:
    Beat the yolks with the sugar until combined, and then fold in the mascarpone. In another bowl, whip the fresh cream. Fold into the mascarpone mixture.

    Dice 1 punnet of the strawberries and marinate them in 2 tablespoons of aged balsamic.

    Combine chocolate and cream in a bowl. Place bowl over a pan with boiling water on low heat and allow the chocolate to melt. Then leave aside to cool.

    To serve fill a crepe with the mascarpone mix and then some of the marinated strawberries then fold into a square. Place a few tablespoons of the chocolate sauce into a pasta bowl and place a filled crepe on top. Drizzle with a teaspoon of aged balsamic and garnish with a sliced fresh strawberry.

    Im sure it tastes great, but those photos leave a lot to be desired...looks like custard, cream strawberries and some brown stuff in a bowl...

    yes my photos are woeful

    but my food tastes magnificent :p
