So i'm totally new to these devices, have been running a Win7 PC with FlexRAID for a while but considering moving to an off the shelf NAS for power use and space reasons.

Just wondering how these handle adding new drives, can't find much online.

I currently have 5x 4TB HDD's, with enough content to fill about 2 (with a little cleanup). If I was to create an array with 3 fresh drives then copy over the content on the 2 left out of the new array, could i then wipe and add the 2 left out drives and expand it to include them?

If not can the Synology do this?

Yes what you're proposing will work fine.

    - Copy all your content onto 2 x HDD
    - Use other 3 x HDD to create a RAID5 array
    - Copy data to RAID5 array
    - Extend the array using the original 2 x HDD (or just 1, and have another as a hot/cold spare)
