Muggleton Salad w/ Ranch Dressing

    This has been my fave salad for the longest time.
    In all honesty i don't make it that often, but it never disappoints.
    The last event was at a joint b'day party with myself and 30 others. People went ape shit over it, i caught one lady licking the bottom of the bowl :lol:
    Traditionally i use a 3 ingredient dressing but on this occasion i whipped up a Ranch Dressing of epic awesomeness.
    Give it a try its pretty special and as i say in the recipe link, you could place some bacon or salad on the side to please everyone.



    INGREDIENTS

    Salad Component: 


    • 1 small bunch of a Soft leaf lettuce, such as Butter leaf Lettuce
    • 1 handful of Rocket
    • 2 handfuls of Baby Spinach Leaves
    • 1 Punnet of Cherry Tomatoes - cut in halves
    • 1 Avocado - cubed
    • 1 banana - sliced
    • 100g Sundried Tomatoes - roughly chopped
    • 1/2 small tub of pitted Kalamata Olives
    • 1/2 Red Onion - finely sliced
    • 1/2 Red Capsicum - sliced length ways
    • 1/2 Green Capsicum sliced length ways
    • 100-150g Feta - roughly crumbled

    Bulla Ranch Dressing: 


    • 1/4 cup Bulla Crème Fraîche OR Bulla Light Sour Cream.
    • 1/2 cup Whole Egg Mayonnaise
    • 1 garlic clove - freshly grated
    • 1/4 cup Italian Flat-leaf Parsley - finely chopped
    • 2 Tablespoons fresh Chives - finely chopped
    • 1 tsp Apple Cider Vinegar
    • 1 tsp Worcestershire Sauce
    • 1 - 2 Tablespoons Lemon - freshly squeezed
    • 1/2 tsp Sea Salt
    • 1/2 tsp Cayenne Pepper
    • 1/2 tsp Paprika
    • Dash Tabasco (optional)
    • Buttermilk OR full cream milk (used to thin it out until desired consistency)

    METHOD

    1. Combine the dressing ingredients & place them in the fridge to get to know each other. 
It tastes fantastic as is, but making the night before would be even better! 



    2. Chop all the Salad Ingredients.

    3. Layer the Lettuce; Rocket & Baby Spinach leaves at the bottom of a large salad bowl. 
This bowl would preferably be wider than it is deep so you can see all the wonderful ingredients.

    4. Proportion the rest of the ingredients evenly over the top.

    5. Pour over part of Ranch Dressing just before serving. The remainder of the dressing can be served in a separate bowl for those of us that like to Dollop on more :)

    This is a perfect dish with some early warm weather about.

    Could eat it on its own with the amount of stuff going on there.

    Banana? Really?

    It sounds amazing but I think the banana bit is scaring me. No doubt it's awesome though.

    For sure ... I have done many times. I'll concede its not the cheapest salad to make but its one of the best.
    You could have it without the banana but it really does have a righteous place with the rest of the ingredients. Smash some down and tell me im wrong ;)
