    Hi,
I'm building a HTPC at the moment using a
    Gigabyte H77N-WiFi Intel LGA 1155 Mini-ITX Motherboard
which has a PCI Express 3.0 x16 slot

what i am wondering is how do i know what PCI card will fit? say a
    Leadtek Winfast DTV2000DS
    which is a 32-bit PCI 2.3

is there a compatibility guide somewhere?

    PCI
    PCIX
    and
    PCIE
    are all different technologies.

You will need a PCIE TV Tuner, but I am going to recommend that you get a good USB one instead to avoid any potential PEG problems.

With a HTPC I would recommend a dual DVB-T tuner, especially if you want to watch one channel while recording another channel.
    Something like THIS maybe.

No PCI card will fit. PCIe and PCI are completely different interfaces.

As terrastrife has said, USB might be the best option here. Some boards can only use a video card in the main PCIe 16x slot, which makes it a PEG (PCI Express Graphics) slot rather than a 'proper' multi-purpose PCIe slot.
