Simple recipies for lazy people like me.

    Damn, you gotta read the pack of those popcorn packs. The chemicals in them are amazingly carcinogenic...


    If you want quick popcorn. Grab some paper lunch bags. Put unpopped corn kernals in( they are sold right next to microwave popcorn) and put that in the microwave for 2 minutes. Then when done add personal preference of flavour.

    Yeah, for a kid it's a great exciting moment watching them all pop.

    I used to do it on stove top, but that takes a bit of skill and takes a bit longer, although the popcorn tastes less bland due to it taking on some of the flavour from the medium you cook them in.

    I stay away from vegetable oils as those too are very bad for you, they are oxidants, the lot of them. Also, you've never had good popcorn until you've had some that were made with lard and salt.

    hot oils yes. ive heard they are bad for you.

    wont stop me eating them.

    simple whole foods are generally good i think weve had this discussion.
    i put cream in my coffee sometimes too.

    Lazy you say? Look at some of my unfinished posts:D

    Lazy still requires some effort. A day can make a week easy:
    In 1 day- Head to Aldis:
    *1-1kg rump steak, jar of stirfry sauce, 1kg bag of stirfry frozen veg, bag of rice.
    Slice the steak into small strips, cook 1-1/2 cups rice. Fry steak, add veg and sauce.
    Divide into 5 takeaway containers and eat at your leisure. Can freeze for a few weeks even.

    *2-Jar of passata, pack (2) chorizo, pack of pork snags, can of beans, few potatoes, dozen eggs.A red capsicum.
    Chop up the spuds ( 2 decent ones) into small cubes, pan fry dry for 5 mins tossing regularly, add chopped chorizo and snags then fry for 10 mins or near done. Add beans, diced capsicum, 1/2 jar of passata and simmer a few mins, add minced garlic. Divide into 5 takeaway containers and in the morning heat up in microwave for 1 min. Zap an egg in a small bowl (cracked open, yoke pierced) with a bit of pepperand nuke for 30 seconds covered. Slide on top of your brekky pack and ya got Shakshuka every morning for near a week:D

    You also now got pasta sauce makings and eggs hanging around.

    Best boiled eggs aint boiled...2 eggs in cold water. Bring to a rolling boil for 45 seconds. REMOVE FROM HEAT! and cover.
    For dipping eggs (soft & runny) wait 3-4 mins.
    Salad eggs still soft centred- 4-6 mins.
    To chop or take away shelled- 6-8 mins.

    Easy peanut stir fry.

    1)Heat oil
    2)Brown diced chicken.
    3)Add tablespoon or 2 of crunchy peanut butter and a splash of water if too thick and simmer for 10 mins or until chicky cooked. (garlic, splash soy sauce, onion powder all optional)
    4)Add bag of what ever veg you like, if you like.
    5)Serve with rice (microwavable for ultimate easy).

    I have 2 tips for this thread;

    1) roast potatoes in the air fryer are so easy. Just chop a few potatoes into 4, 6, or 8 pieces depending on how big it is (thats 1 cut long ways, then 1-3 more cuts the other way), and put them in. I've tried drizzling oil on whilst they are in the basket **, but it seems to flow off too easy, so I don't bother now. I just flip them halfway through and embelish them with olive oil / spices / sauce / etc once they are on the plate.
    ( ** If you can spray oil on, that would work, but I'm not buying aerosol spray oil, and don't have a DIY sprayer if they even exist)

    2) If you like big sloppy meals, I got an electric pressure cooker a few months ago, and it's boss. You just chuck a bunch of shit in**, push go, and out comes a tasty meal. Check out this chicken meal for inspiration. You just chuck in raw chicken pieces, some diced potatoes and onions, whatever else you want, push go, and bam, delish meal is ready in no time.
    ( ** a lot of recipes say to brown the onions and maybe leak etc in the pot. The problem is if you do that you then have to deglaze the pot, or the food will burn to the pot when under pressure. So I don't bother. Sometimes I will brown the onions/garlic/etc in the wok before putting them in pressure cooker, but I'm not sure how critical it is.)

    I'm lazy, but that's too lazy for me. All I do is ~1cm deep rice in pot, fill with 1cm higher water, sprinkle of salt, lid on, put over max burner, listen for it to start boiling over (5min?), turn it down to simmer, go back in another 10min and its cooked.
    Edit: In a 15-20cm pot, that's an easy 4 serves of rice. So I put the pot in the fridge and use the cold rice for quick stir fries etc (eg egg fried rice, with frozen veg).
    Nah it's easy too. Put a good amount of "oil" the bottom of a pot (olive or coconut, or butter), put 1 kernel in, lid on, put over max burner, wait/listen for the 1 kernel to pop (takes a few min and means the oil is up to temp), then put the rest of the kernels in. Those kernels will then start popping within like 20sec.
    Use cast iron pan or wok with plenty of oil, then you don't have to clean it after.

    Super simple Chicken Mee Goreng

    Brown some chicken pieces.
    1/4 a head of cabbage
    glove of garlic smashed
    1tbsp of kecap manis (sweet indonesian soy sauce), 1tbsp of soy sauce, and 1 tbsp of oyster sauce

    Egg noodles.

    Done. Took me 5 minutes to cook.

    Cut up the cabbage while the chicken browns.

    Super simps

    my lasiest meal... hmmmm

    cook up some diced chicken breast.

    get a bag of microwave rice of your choice (i prefer brown and red, but whastevs), and nuke it

    get a jar of salsa and open it.

    combine all 3.

    eat pure victory.

    Baked Beans
    Curry Powder

    Combine above in portions that you choose. Eat with two pieces of bread. Done. Yum. It's the simple things in life.

    Sausages with onions and peppers (ie capsicums, it's an italian american thing). This is not my recipe, but I can't remember where I got it from.

    2 tblsp extra virgin olive oil
    1.5 teasp salt
    0.5 teasp black pepper
    1 tbls light brown sugar
    2 tbls tomato paste

    Mix the above, put in slow cooker

    2 medium onions, cut into half rounds
    3 medium red onions, cut into half rounds
    2 medium red capsicums, diced
    2 medium yellow capsicums, diced
    2 medium orange capsicums, diced

    Mix veges in sauce in the slow cooker to coat. You don't need different coloured capsicums, you don't need different onions, use whatever you want or already have.

    Add a kilo of italian sausages (or any sausages you like).

    cook in slow cooker on high 5 hours

    You can have a sausage with the veggies in a crusty roll (this is how they have it in america), or eat it by itself on a plate. Whatever you like.

    The lazy part is using the slow cooker, you just have to chuck everything in and it cooks itself.

    Woollies has had small chickens on special lately. all around the 1.2 to 1.3kg mark.
    The first time they were $5 each. Now $5 per kg but still pretty good value.
    For 10-12 bucks you get 2 birds. 1 for dinner & 1 for lunches etc. Butterflied they take around 10 mins to prep & 50 mins to cook.

    Cooked these with Oregano, Paprika, Cumin & salt. Cut up some Potato into thick chips & some pumpkin chunks & bunged the lot in the oven.
    Salad on the side. For around $20 we'll feed 4 people for 2 -3 meals.

    SO not very appealing pics but these pancakes are from my simple recipe. When I say simple, my youngest son was making these on his own from the age of 5 & regularly makes them on Saturday morning with the recipe memorized.

    300g SR flour. 450ml Milk. 3 eggs.
    Whisk together. Add a pinch of salt &/ or sugar if you want but I don't bother. Adjust the mix for thickness depending on what you want. If you're doing rolled Mango pancakes, make the mix thin by slightly less flour or more milk. If you're just doing Aussie style with sugar & lemon or maple syrup, make the batter thicker with a bit more flour.
    Cook on low/med heat.

    Super easy & a great way to teach the kids to cook.
    Excuse the mess, The boy is better at measuring & mixing than he is pouring & flipping.

    I made a version of this. Extremely easy because it uses tins. I didn't have any cayenne, put some hot paprika instead as well as mild paprika. Also used drumsticks (I like dark meat, and they are cheap) so it took more effort to eat than a soup. Also used 1L stock and put in rice. Didn't brown anything beforehand, just bunged the lot in the slow cooker. Also put in some coriander leaves (dried).
    The only effort was cutting a couple of onions and an enormous capsicum and the garlic. Easy peasy and tastes good. Could probably use a chili thrown in. (I had a jar of jalapenos, and threw a few in, but a whole chili would give it more oomph, if you like oomph. I think a bit more spice would be nice if you are doing it as a casserole. Chili next time for me)

    If you used drumsticks I wouldn't even bother buying stock.

    I made a one pot curry tonight. Potato, onion, chicken breast, can of coconut cream, simmered 25 minutes with some garam masala (if you don't have a mix then just ground cumin, coriander, garlic and tumeric is enough of a substitute), add some tofu, cauliflower (or broccoli) and frozen peas/corn. Served with some flatbread.

    It was mainly for the rice to suck up.

    Curry sounds nice. How about cauli AND broccoli? I improve everything. :D

    The cauliflower was because it was on a deep special. Broccoli prices are wild, one week it'll be $1 for one, next week it's $4 for a half. This time it was too much.

    Stick to one price for a while! :leet:
