Using Pizza stone for heat transfer

    So I'm watching a Youtube creator (Binging With Babish - Who is fucking amazing BTW), and he's constantly using a pizza stone in his oven to help with heat transfer.

    Do other people do this? Is it a pretty common thing?

    Yes, but I haven't.

    I'd imagine a thickish metal tray would provide a similar heat retention.

    I have a cast iron square skillet that would hold heat for a prolonged period.

    In what context are you talking about heat transfer.

    Well oven. From what I’ve seen, preheat the stone when you preheat the oven, then whatever you’re cooking goes in on the pizza stone instead of the rack itself.
