Vietnamese style salad, charred scotch fillet

    This is a real simple one, good for when you only have 15-20mins spare.

    All you need is a chopped chinese cabbage, bean shoots, finely sliced capsicum, a little bit of finely diced chilli (depends how high your heat tolerance is), snow peas.

    Make a simple sauce of 1 tablespoon each of soy, fish sauce, most of a small fresh lime, pinch of sugar, a little dash of white wine vinegar if you have it. Lightly sautée the veggies for a couple of mins, and drizzle the sauce over like a dressing (don't drown it).

    For the scotch fillet, salt/pepper on both sides, grill on a skillet for 3ish mins per side on very high heat along with fresh rosemary and crushed garlic, then into the oven wrapped in aluminium foil for about 6 mins (mine was probably just slightly more than I wanted) then rest it for 3-4 mins, chop up into slices and serve!
